What are the traditional foods from Indonesia that contain pork?
There are many traditional ceremonies or celebrations that are routinely held in all corners of the archipelago. Not only about culture, these traditional ceremonies also often involve delicious special dishes.
In some areas, processed pork is a must-have choice for certain celebrations. Pork is also processed in different ways, resulting in different tastes. The following are:
1. Pork bolsters
Babi guling is a typical Balinese dish which is usually present during major holiday celebrations, such as Galungan. The selected meat is usually in the form of piglets.
The pork belly will be cleaned, then filled with special herbs and vegetables, such as cassava leaves. Then, the pig is skewered and roasted while spinning until cooked.
2. Pork rump
Besides pork roll, another must-eat dish during Galungan is lawar. Lawar presented also varies, depending on the region. However, the most popular is Lawar Nyuh.
Nyuh lawar is made from coconut mixed with pig blood. The pig’s blood is then mixed with pieces of pork, young jackfruit, grated coconut, and Balinese even-seasoned herbs.
When Galungan, lawar is generally made by the men together. This is a symbol of mutual assistance and strengthening of kinship.
3. Saksang
Saksang is a special dish typical of the Batak people who is usually served during traditional events or wedding processions. Made from chopped pork, saksang is cooked with spices, coconut milk and blood from the slaughter.
4. Stone roasted pork
Stone roasted pork is a traditional preparation originating from Papua. As the name implies, this dish existed during the stone-burning tradition.
This tradition takes the form of cooking rituals together with residents of one village. The goal can be to give thanks, to make friends, to welcome happiness, or to gather soldiers to fight.
In this tradition, the stone is heated until it ignites like hot coals, then the pigs are arranged with tubers and vegetables until evenly cooked.
5. Harinake
Harinake is processed minced pork originating from the Nias Islands. Usually served as a form of respect for in-laws in the tradition of the first visit after the marriage took place. Pork will be chopped and sliced into small pieces and thinly.
6. Swine pork
Swine pork come from Manado. This dish is similar to a typical Balinese pork roll.
Initially the pork will be seasoned, then burned by rotating until cooked. Swine pork are usually served by the people of Manado during Christmas celebrations.
7. Pork tinorangsak
Tinorangsak pork is a typical dish of the Minahasa tribe. This food is usually served every traditional ceremony of the Minahasa tribe.
Tinorangsak is made from pork cooked with a mixture of spices, such as red chili, large green chili, ginger and roasted turmeric.
Traditionally, this food is cooked in bamboo sticks. Pieces of meat and spices put into bamboo sticks, then burned in an open fire furnace.
